Everyone needs a few easy recipes for busy days. This’s one of my favorite ones… it often makes it to my table when I’ve had a full day of errands and appointments or on Sundays when I don’t want to spend hours in the kitchen in between church services. It’s a quick, tasty meal and everyone in my family loves it, which as anyone knows, is quite the miracle.
2 cans of chicken breast, drained
3/4 cup of light Hellman’s mayo
1/4 cup sweet relish
A dash of salt and pepper
1/2 pack of Hidden Valley Ranch Dip Mix (kids can’t resist ranch, fellow mommies!)
And for my own, I add a small handful of chopped celery. So, it’s optional. 🙂
Mix and serve on bread or rolls. Serve with fresh veggies or chips.
