Hello, my lovelies!
I’ve got a fabulously yummy recipe for you today but I want to share it with you with complete honesty. I got this recipe from a blog I love and often visit, The Comfy Kitchen. (The original recipe is linked.)
But, I took the recipe and made some tweaks to it. Here’s my spin on it.
2 packages of real bacon bits
2 cups mild cheddar cheese, divided
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 tsp. onion powder
2 tablespoons bacon drippings or vegetable oil
3 cups milk
3 cups chicken broth
10-12 Idaho potatoes, peeled and diced
2 1/2 tablespoons flour
Sauté celery and carrots in bacon grease or oil for 5 minutes. Add onion powder and flour. Whisk in milk and chicken broth. Add potatoes and bring to a boil. Reduce heat and simmer 20 minutes. Remove from heat, add 1 cup cheese and stir until melted. Garnish with bacon bits, green onions and cheese as desired. Enjoy!
